Let's turn grocery store ingredients into restaurant-worthy dishes. Many of my guests are stunned to learn how simple it is to create these delicious dishes.

First, we'll introduce ourselves to break the ice. Then we'll go right into hands-on cooking! We'll start with making ricotta cheese in a very simple way with ingredients that you are likely to already have at home. We'll also create a simple tartine and "grown-up mac 'n cheese" using a few simple ingredients, including the ricotta cheese that you just made.

In the process, you'll have a chance to take a virtual tour of my garden here in California wine country to learn about culinary herbs and edible flowers. I will teach you ways to use the whey, which is a byproduct of cheesemaking.

Once we finish cooking, we will sit and taste what we created and talk about the recipes, the experience, and life in wine country. We'll even drink some wine together, and I will make some suggestions for you about matching wine with what we made.

Was du mitbringen solltest

  • Desktop or mobile device. Stable WiFi.
  • For the ricotta: 1 quart Whole or 2% milk, not ultra-pasteurized or shelf-stable. We have had success with lactose-free milk.
  • For the tartines: Bread (rustic is best), honey and/or olive oil and toppings such as herbs, dried fruits, smoked fish etc.
  • For the mac 'n cheese: 4 ounces dry pasta, grated romano or parmesan cheese, and coarsely ground black pepper
  • Measuring cups and measuring spoons

Juli and Walt know how to host! They are welcoming and warm. Even though it is an online class, it made me feel like I was cooking right next to them in their kitchen while Juli shared her personal stories and tips with us. Of course, I am excited that now I know how to make ricotta cheese at home, but how authentic and genuine these two are is what makes this experience extra special! Thank you both!

Well THAT was sure a fun, informative, delicious 90 minutes! Highly recommend Juli's ricotta (aka "rigott") making class to anyone who likes to eat good food! It was like a little miracle watching the milk transform to ricotta right before our eyes, and wow was it delicious. Juli goes out of her way to make everyone feel welcomed, and it was so cute to see her mustachioed hubby of 45 years tidying up after the major dishes were made. A friend came over for a socially distanced backyard visit after this class and was wowed by the crazy good mac and cheese, and the tartines! Already made a new batch of ricotta. Thanks Juli!

Chef Juli is wonderful and I was so amazed by how easy the process is! Plus both the cheese and pasta were absolutely delicious! I learned a lot of kitchen tricks and I have already used the recipe we learned again several times!

What a wonderful experience. Juli is an experienced and knowledgeable chef and shared her skills with us. She communicated with each of us individually aimed at our skill levels and also addressed us as a group. I was fortunate enough to share this experience with my daughter who lives in Spain and I live in California. Julie gave us clear and concise instructions and we didn't feel rushed, and gave us great cooking tips. We felt comfortable asking questions, it was like being at a friend's kitchen. Would do another class with Juli any time at all. Walt, Juli's husband was great also, helped me with my laptop, from miles away and loved his comments and technology. Also met Juli and Walt's rescue dogs, adorable, and saw their lovely herb garden. Wonderful experience. Don't hesitate to take Juli's class, she's a treasure.
