Was ihr unternehmen werdet

We'll explore the flavors of French traditional cuisine during this online experience where we are going to prepare 2 iconic recipes: creme brulee and cheese souffle. The menu changes every 2 weeks but I can also plan a class around a French recipe you would like to learn.

It is a hands-on French cooking class so you will mirror me at the same time. In order to do so, ideally use a computer with the camera orientated to your chopping board and make sure it is fully charged and the internet connection is good. My camera will be as well on my chopping board that you can see closely what is going on.

At the beginning of the session, I will explain alternative ingredients that could be used and give you ideas to make the recipes differently.
Then, I will guide you through the recipe that you can follow me pretty much at the same pace.

Seeing your chopping board will also help me to give you advice if need be.

After the class, I will be sending the recipes and link to my Youtube channel to discover more recipes.

Was du mitbringen solltest

  • 1 cup half filled with water, 1 knife, 1 chopping board, an oven with grill or a gas burner (from DIY store) , 1 oven tray or oven dish that can hold 4 ramekins
  • 2 medium sized bowls, 8 ramekins with straight sides (no bowl), 1 laddle, 1 pot and 1 bowl to go in for bain marie, 1 electrical mixer
  • 40g+10g butter, 30g+10g flour, 250ml milk, 300ml liquid fresh cream, 60g sugar, 11 eggs, 120g grated cheese (emmenthal, cheddar or gruyere)
  • 1 tsp nutmeg, 1 tsp vanilla powder

I have been given French and South African cooking classes for the past 10 years and with the lockdown, I have started to give them online on Zoom and now on Airbnb. I am French and so born and raised with the cooking passion in my blood and through the class, I share my culture, tips and stories about the recipes I teach. I also accompany clients in various French regions (Normandy, Burgundy, Bordeaux) on food tours to expose them to authenticity. Through time, I have built a repertoire of more than 300 recipes.
Also, because I live in Cape Town, South Africa since 2001, I am aware of what foreigners appreciate in the French culture. Also, I have learned South African gastronomy and it is another culture I like to share recipes from.

This was a great class. In our session, we learned some helpful knife cutting skills and made delicious ratatouille, cookies, and crepes. Nadege did a great job in taking us through the process.

This experience was amazing. The result even better. The structure of the class was suited the audience. Nedege did a great job in taking us through the steps of making a delicious and beautiful soup. She emphasized the importance of uniformity in cutting the various vegetables that we used and gave us some great knife cutting tips. We also made tasty olive muffins to eat with our soup. This is my second online experience with Nadège. She is such a warm, kind, and excellent host. The chicken chasseur and mashed potatoes turned out incredibly well. I love that she shares such helpful nutritional and kitchen maneuvering tips (like chopping onions like a magician)! 🙂 I highly recommend Nadège's online experience, especially if you appreciate French cuisine but have reservations (like I had) about trying to produce it on your own.
