A tour of the uniquely designed smokehouse which is inspired to look like a traditional Scottish building called a cleit. A peat roof and stone walled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 4 different canapes of hot smoked salmon.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

Wo ihr sein werdet

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

This was such a great experience and we couldn’t recommend it more! It was incredibly unique, John is highly knowledgeable, friendly and is an amazing chef! His smoked salmon is out of this world, along with the different ways he creatively prepared it. Johns story of how he got into smoking salmon is interesting, and you can tell how passionate and excited he is to be doing this. He cares a lot about the details of his process and the salmon and that shows. Overall, we learned a ton, got a glimpse into something unique, and got to taste some AMAZING smoked salmon. Highly recommend!

Highly recommended. Experience yes, of this small smoke house and explained all the processes to make the salmon really special. Followed by the home prepared tasting treats which were extremely delicious. Great day !

What an enjoyable visit to skye only smokehouse. John was a great host, showing us how he does all the hot smoking. Almost forgot to mention his cooking skills and the tasting we had was absolutely brilliant
