“Also located within the Waterloo Arts District, and just a short jaunt away from the coffee shop, Citizen Pie is another go-to for me. Chef V opened this iconic restaurant just a few years ago. He hails from Lithuania, but is no stranger to a classic Neapolitan-style Italian pizza pie. They use a wood-fired oven imported from Italy, and the pies are ready in about three minutes. They do offer take-out but in my opinion you lose the full authentic experience if you do not eat there. That being said, unfortunately seating is again sparse. ”
